The Wines

The terroir as it is known in France, is ideally suited to producing the local sparkling wine, as the weather from the Pyrenees creates a micro-climate that helps brings the best flavour out of the grape. The family de Ginestous have been involved in producing Blanquette and Crémant for 300 years and so you will be sharing the secrets of tried and tested formula when you enjoy the wine from here.

This cuvée is made with Boytris grapes. In the 16th century Morillion Blanc was the name for Chardonnay. Jeff Carrel chose to vinify this wine so that it could express itself in various new ways. This particular Limoux terroir within a woodland allows the grapes to ripen in an unique way: the cool wet mornings favouring the grapes, with the warm dry afternoons completing the job.
