Guyot pruning: 15 + year old vines, 4,000 vines per hectare. These Boytrist free grapes are fermented in the traditional vineyard casks for 5 months, then in barrels for 14 months, before being matured again in the casks for 3 months. Gasparou is located halfway up a west facing slope, on the borders of the protected Malpiére region.

A fine and elegant fizz – fresh and crisp on the nose, with aromas of white flowers, pear and grapefruit. It offers hints of hazelnut and has a subtle, toasty finish. The taste is well-balanced with palatable, fine and persistent bubbles. Harmonious hints of honey, with a mouth feel that is full-bodied, powerful and persistent. It’s the ideal aperitif, perfect with salad, fish dishes and poultry, as well as cheeses such as brie.

Morrillon Blanc

This cuvée is made with Boytris grapes. In the 16th century Morillion Blanc was the name for Chardonnay. Jeff Carrel chose to vinify this wine so that it could express itself in various new ways. This particular Limoux terroir within a woodland allows the grapes to ripen in an unique way: the cool wet mornings favouring the grapes, with the warm dry afternoons completing the job.

Chateau Saint-Roch "Limoux"

Wine making:Having been harvested by hand once the grapes have reached optimum maturity, the process is followed by very gentle pressing and clarification in a tank, naturally fermented in a cask and then bottled after tasting.
